Now that the festive season is behind us, many of us will be feeling the strain of the over-indulgence. Get back on track with this tasty winter salad, packed full of nutrients and flavours to make being healthy easy.
½ small avocado, cut into chunks
2 bacon rashers, cut into pieces
Red pepper, diced
1 chicken breast, sliced into small chunks
Spring onion, thickly sliced
Mixed salad leaves
- Heat a drizzle of olive in a frying pan over a medium-high heat. Prepare your chicken by seasoning with salt and pepper, and then add to the pan to cook.
- Once the chicken is starting to cook all over, add the bacon to the pan as well. After a minute, add the peppers and spring onions as well. Continue to fry until all the meat is well cooked.
- Once you’ve checked the chicken and bacon are done, turn the heat down to medium and add the avocado to the pan. Warm this through.
- Place a generous handful of salad leaves on a plate. Spoon over the chicken and bacon mixture and serve immediately.
