Now that the festive season is behind us, many of us will be feeling the strain of the over-indulgence. Get back on track with this tasty winter salad, packed full of nutrients and flavours to make being healthy easy.

Ingredients

½ small avocado, cut into chunks

2 bacon rashers, cut into pieces

Red pepper, diced

1 chicken breast, sliced into small chunks

Spring onion, thickly sliced

Mixed salad leaves

Method

  1. Heat a drizzle of olive in a frying pan over a medium-high heat. Prepare your chicken by seasoning with salt and pepper, and then add to the pan to cook.
  2. Once the chicken is starting to cook all over, add the bacon to the pan as well. After a minute, add the peppers and spring onions as well. Continue to fry until all the meat is well cooked.
  3. Once you’ve checked the chicken and bacon are done, turn the heat down to medium and add the avocado to the pan. Warm this through.
  4. Place a generous handful of salad leaves on a plate. Spoon over the chicken and bacon mixture and serve immediately.
